Ingredients
- 1/2 medium yellow onion
- 2 stalks celery
- 1 cup carrots
- 1-2 tablespoons olive oil
- 1 14 oz can of diced tomatoes
- 1 12 oz can of cannellini beans (washed)
- 1-2 cups vegetable stock
- 1 tablespoon tomato paste
- 1/2 teaspoon black pepper
- 1 tablespoon dried oregano
- 1/4 teaspoon chili pepper
- salt to taste
- Dice your onion, celery, and carrots.
- Add olive oil to a heated sauce pan and add your diced vegetables.
- Stir occasionally until the onions are translucent.
- Add diced tomatoes, cannellini beans, vegetable stock, tomato paste, black pepper, oregano, and chili pepper, stir together.
- Let soup simmer on low-medium heat for about 40 min., until potatoes and carrots are cooked through.
